Mawa Gujiya is the very popular snack prepared during holi occasion. These gujiyas are the sweet pastry, filled with khoy and dryfruits.
INGREDIENTS
- All purpose flour - 1 cup
- Semolina - 1 tbsp
- Ghee - 3 tbsp
- Milk(optional, water can be used) - 3 tbsp or more
- Salt - a pinch
- Oil for frying
For filling
- Whole milk Ricotta cheese - 1 cup
- Sugar - 3/4 cup
- Unsweetened dry coconut - 1/4 cup
- Sugar - 3/4 cup
- Raisins - 10 to 12
- Pistachios,chopped - 10
- Almonds ,chopped - 10
- Cardamom powder - 1 tsp
PREPARATION
For making filling
- Drain all the water from ricotta cheese using cheesecloth.
- Mix ricotta cheese and sugar in the thick bottomed pan and place it on medium flame.
- This mixture will turn liquidy,stir well for about 20 minutes or till this mixture becomes thick.
- When the mixture is thick,turn off the flame.
- Add all the remaining ingredients and mix everything well.
- Let the filling mixture cool down .
- Take wide bowl and in that combine all the mentioned ingredients of the pastry , mix well and prepare soft dough using milk.
- Divide the dough into 10 equal parts and make a small balls.
- Flatten each small balls into small round circle. At the centre of the circle, place 1 tbsp of filling mixture.
- Apply milk or water at the edges of the flatten dough.Fold the half side of the circle over the another side to form a crescent and press to seal the edges.
- Edges can be folded in any patterns as per your choice.
- Heat the oil in the frying pan and deep fry all the gujiyas until they turn light golden in colour on both the sides. Cool down the gujiyas and store it in air tight container.
