Valentine Special!!!! ..........Eggless Mango Cake with Buttercream Frosting



Wish you all a Happy Valentine's Day... Hope you all had a great day with your valentine. I too enjoyed my day and also recieved many gifts from my valentine. On this lovely occasion I thought to bake a cake. After many thoughts I came with idea of making mango cake with buttercream frosting.It was heavenly delicious and we enjoyed it alot.  Going on to the recipe.


INGREDIENTS

  • All purpose flour - 1&1/2 cups
  • Softened butter - 1/2 cup
  • Sugar - 3/4 cup (If mango pulp is sweet, reduce the sugar)
  • Milk powder - 1 cup
  • Baking powder - 2 tsp
  • Baking soda - 1/2 tsp
  • Mango pulp - 3/4 cup
  • Mango essence -1/2 tsp (optional, you can add cardamom powder or vanilla essence too)
  • Milk -1/4 cup
  • Salt to taste


Buttercream Frosting

  • Softened butter - 1/2 cup
  • Powdered sugar - 2 cups
  • Vanilla essence - 1/2 tsp
  • Milk - 4 tbsp


 PREPARATION

  • Sieve all purpose flour, baking powder, baking soda and salt. Mix well and keep it aside
  • In a wide bowl, add butter, mango pulp and milk. Whisk well and make a smooth mixture.
  • Then add milk powder and again whisk the mixture.
  • Add flour mixture into the wet mixture. Fold the flour into the wet  mixture. If your using essence add it now.
  • Preheat the oven to 375 F.
  • Grease the cake pan and add the cake mixture into it. I used two 4 inch sized cake pan. Bake the cake for 35 minutes. 
  • Check the cake by inserting the tooth pick or knife. If the tooth pick or knife comes out clean then the cake is ready to come out of the oven.
  • Once done, take the cake out of the oven and allow it cool down.


Buttercream Frosting

  • Whisk the butter well. To that add 1 cup of powdered sugar. Whisk again.
  • If you think the mixture is dry and cannot whisk properly, add about 1 to 2 tbsp of milk.
  • Then add the remaining powdered sugar and vanilla essence. Whisk again until you get thick frosting.



Assembling the Cake
  • Slice the cakes in between.
  • Place one slice on the cake board. Apply some frosting and then place another slice. Repeat the process until all the slices are stacked.
  • Now apply the thick coat of frosting all over the cake and try to smooth it out using cake smoothing spatula.
  • Pipe out the design on the cake.
  • And here we go delicious cake is ready to make your occasion the grand.
