Fresh Strawberry Ricotta cake

  • Cake flour -1 &1/2 cup (I have used of chocolate flavor, vanilla flavor can also be used)
  • Baking powder - 1/2 tsp
  • Softened butter - 4 tsp (50 gm)
  • Condensed milk - 1/2 tin (100 gm)
  • Luke warm milk - 1/2 cup
  • Vanilla essence - 1/2 tsp
  • Strawberry pieces or strawberry jam - 4 tbsp

 Ricotta Frosting
  • Ricotta cheese - 15 oz
  • Whipped cream - 2 cups
  • Vanilla essence - 1 tsp
  • Powdered sugar - 3/4 cup
  • Strawberry slices (quantity as per your choice)

  • Sieve the cake flour and baking powder and keep it aside.
  • In wide bowl add softened butter and condensed milk.Mix well.
  • To that add flour mixture and using warm like prepare a thick batter.
  • Add vanilla essence and strawberry pieces and fold it into the cake batter.
  • Preheat the oven to 350 F.Grease the tray or line the tray using parchment paper.
  • Pour the batter into it and bake for about 30 minutes.
  • Insert the knife into the cake, if knife comes out clean that means cake is done.
  • Transfer the cake to the cooling rack and keep it for cooling.
  • Lets move for preparation of frosting.
  • Blend the ricotta cheese and powdered sugar.
  • Then add vanilla essence and whipped cream.
  • Do not mix too much.Just folds into it.
  • When cake cools up. Spread the frosting on the cake.
  • Chill the cake until frosting  firms slightly for about 2 hours
  • Then garnish the cake by gently pressing strawberry slices on the cake( If you want you can brush melted strawberry jam all over the strawberry slices)
  • Keep the cake chill. It taste delicious.
