Eggless Tri Colour Cookies - Happy Republic Day 2021

In honor of India’s Republic day, I baked these amazing Triranga cookies (Tricolor Cookies).   These cookies turned out to be so perfect. They were absolutely delicious and just melted in the mouth.


Baking eggless cookies come up as a challenge. But believe me, this recipe will simply give you the best textured cookies which you are looking for. 

So let’s start with the recipe.

INGREDIENTS

  • All-purpose flour – 1 cup +3 tbsp
  • Softened butter – ½ cup (room temperature)
  • Powdered sugar – ¼ cup
  • Baking powder – 1/8 tsp
  • Vanilla essence – 1 tsp
  • Salt – a small pinch
  • Orange food colour - as needed
  • Green food colour - as needed

METHOD

  • Sieve all 1 cup of all-purpose flour, baking powder and salt .Keep this flour mixture aside for later use.
  • Combine butter and powdered sugar into a bowl. Mix everything well till you get creamy mixture.
  • Then add vanilla essence. Mix well.
  • Now add flour mixture and mix gently with creamy butter mixture.
  • Here we are looking for non-sticky dough.
  • If the cookie dough is sticking to you’re, add around 2 tbsp of all-purpose flour and mix gently.
  • Divide the dough into three equal portions.
  • Keep one portion of the dough as it is. We will use it for center part of the India flag.
  • Add orange or saffron color to one part of the dough and mix gently until color is well mixed into the dough.
  • To another left portion of the dough, add green color and mix gently.
  • Roll out all three parts of the dough into equal sized rectangle shape.
  • Tack the three parts rectangle dough on each other (i.e. orange on the top, white in the middle and green at the bottom).
  • Wrap the stacked cookie dough using cling wrap and place it freezer for 30 minutes.
  • Preheat the oven for 170 degree Celsius.
    After 30 minutes, take out the cookie dough from the freezer.
  •  Slice the cookie dough from shorter side with measure of ½ inch.
  •  Line the baking tray with parchment paper.
  •  Place the cookies in the baking tray. Do not overcrowd them, leave enough place so that they do not stick to each other.
  •  Bake cookies for 15 minutes to 18 minutes. 
  •  Here we go crunchy and perfect textured cookies are ready.

Christmas Eve - Assorted Cupcakes with Buttercream Frosting



The day which we have waited for long is finally arrived and christmas eve has begin. I wish everyone "A Merry Christmas And a Happy New Year"
This is the day of Lord Jesus and we celebrate it with lot of fun and happiness. Festivals are always incomplete with sweets and also there is no fun when the sweets are missed out during any festivals .So here are some special assorted cupcakes decorated it with home made buttercream frosting. These cupcakes can be hit to any special parties and also can be wrapped them as gifts to your loved ones.

Christmas Sugar cookies with Royal Icing - Both In Eggless Version


With holidays season about to begin, children hope Santa gets them the gifts, while adults hope for a relaxing time. Shops online or offline are buzz with various deals to attract customers. In addition, at home various experiments can be done. Here is something which i tried and it turned out to be a perfect Christmas cookie.

INGREDIENTS
Eggless cookies 

  • Wheat flour - 1/2 cup
  • All purpose flour - 1/2 cup
  • Powdered sugar - 1/3 cup
  • Baking powder - 1/2 tsp
  • Salt - 1/4 tsp
  • Softened butter - 1/3 cup (heaped)
  • Milk - 2 tbsp
  • Vanilla essence - 1/4 tsp


Eggless Royal Icing

  • Powdered sugar - 1/2 cup
  • Corn starch - 1 tsp
  • Milk - 2 tsp
  • Lemon juice - 1/2 tsp
  • Food colours - red , yellow



PREPARATION

  • Sieve wheat flour, all purpose flour, baking powder and salt  in one bowl.Mix well and keep it aside.
  • In another bowl, add softened butter, powdered sugar, milk and vanilla essence and whisk till it becomes the creamy mixture.
  • Then add flour mixture into creamy mixture and mix well to form a soft dough.
  • If your not able to make dough out of the mixture, add 2 tsp of extra milk. But remember do not add more milk, you will not get right consistency of dough.
  • Now roll out the cookies on the butter paper using chapathi roller till just about 1/4 inch of thickness.
  • Then cut the cookies in your desired shape using your favourite cookie cutter.
  • Take the cookies carefully using a ladle and place it on baking sheet and refrigerate it for 20 minutes.
  • Preheat the oven to 375 F and bake the cookies for 15 to 20 minutes or until you see edges turned to golden brown.
  • Take out the cookies from oven and allow it to cool down completely.
  • Once the cookies are fully cooled down, decorate them as the way you like.



For Making Eggless Royal Icing

  • Combine powdered sugar and corn strach in the one bowl. Mix together well.
  • Then add milk and lemon juice.Whisk everything well till you get smooth paste.
  • Then divide the icing into equal portion in different bowls and add few drops of food colours in each bowl.
  • Fill icing into icing bags and seal them properly.
  • Royal icing is ready to decorate the cookies.

Baked Dry Fruits Ghugras


You all know, Ghugras or Karanji or Gujiyas are usually fried . But today I am sharing non fried or baked ghugras with the sweet filling of dry fruits. Baked ghungra are delectable snack with soft crunchy shell that directly melts into the mouth.  Ghungras have many names in every home and they have their own filling recipes.Traditionally Ghugras are made using the moulds, since I did not have it, managed to give its proper shape .For the fun session with your children, you can use any  shape of moulds to make these ghugras. Ghugras are the best known snack during tea time.

INGREDIENTS

For Outer Shell
  • All purpose flour - 2 cups
  • Chilled butter ( should be able to mix in the flour) -1/4 cup
  • Salt - 1/2 tsp
  • Water - 4 to 5 tbsp 
  • Milk wash



For the Sweet  Dry fruit Filling ( See the above image)
  • Almonds (coarsely grinded) - 1/4 cup
  • Cashewnuts (coarsely grinded) - 1/4 cup
  • Pistachios (coarsely grinded) - 1/4 cup
  • Dates, chopped - 1/2 cup
  • Truity fruity - 1/4 cup
  • Powdered sugar - 1/4 cup
  • Coconut powder - 1/2 cup
  • Angeer, chopped - 1/4 cup (optional)
  • Cardamom powder - 1 tsp



PREPARATION
  • Combine all purpose flour, chilled butter and salt into one bowl.
  • Mix well and prepare the tight dough.
  • If required add little amount of water while preparing the dough.
  • Cover the dough and keep aside to rest for 30 minutes.
  • In another bowl, combine all the above mentioned ingredients of the filling. Mix well and keep aside.
  • Divide the dough into 20 equal portions and roll out each portion into 3 inch of diameter circle.
  • Place the filling mixture in the centre.
  • Apply water to one side of the cover and seal them properly. For the simple design, you can just press fork on the sealed side. (See in the images)
  • If using ghugra moulds, once you place the filling mixture. Close the mould carefully and press it lightly.
  • Then gently open the mould and remove the ghugra.
  • Repeat the same process to make the remaining ghugras.
  • Arrange the ghugras on the  baking tray  lined with parchment paper. Brush the each ghugra with the milk wash and bake them on 330 F for 15 to 20 minutes.
  • Keep an eye once the 15 minutes is over. When the ghugra gets light golden in colour, you can take them out of the oven.
  • Filling can be burnt if you  exceed  the baking time above 20 minutes.... Just A Warning
  • Enjoy baked ghugra as much you can during your favourite tea time.

Donuts - Eggless and Baked version


Baked doughnuts are healthy and delicious alternative to deep fried doughnuts.Baked donuts are yummy breakfast treat. Fun of the doughnuts is that you can  decorate the way you like.

INGREDIENTS
  • Whole wheat flour - 1 cup
  • All purpose flour - 1 cup
  • Softened butter -3 to 4 tbsp
  • Flax seeds powder - 1 tbsp (substitute for egg =1 tbsp Flax seeds powder + 3 tbsp warm water)
  • Sugar - 1/3 cup
  • Yeast - 1 & 1/2 tsp
  • Sugar - 1 tsp
  • Warm milk - 2/3 cup
  • Salt - 1/2 tsp
  • Vanilla essence or almond essence - 1 tsp

For Chocolate Glaze
  • Semisweet chocolate - 3/4 cup
  • Unsalted butter - 2 tbsp
  • Corn syrup - 1 tbsp (optional)
  • Vanilla essence for more flavour - 1/2 tsp (optional)
  • Sprinkles



PREPARATION
  • Combine whole wheat flour, all purpose flour,flax seeds powder, sugar and salt in a large bowl and mix everything well.
  • Add dry yeast, sugar in warm water and  mix well.Let it stand for about 10 minutes.
  • When yeast mixture is ready add softened butter and vanilla essence into it.
  • Now add this yeast mixture to the combined flour and knead well till you get very stiffy dough.If required you can use little of warm water.
  • Knead this stiffy dough for about 5 to 6 minutes by adding dry flour and prepare a soft dough.
  • Place this soft dough into the greased bowl,cover it with damp cloth or plastic wrap for about 1 &1/2  hour. Keep it in the warm place( You can keep in the oven,just switch the oven to 200 deg F for about 3 to 4 minutes, then turn off the oven.).This will make dough ,double in its size.
  • After1 &1/2 hour,punch the dough and remove all the air from it. 
  • Roll out the dough into circle of 1/2 inch thickness.
  • Cut out the rolled  dough into doughnuts  using doughnuts cutter .
  • Place the doughnuts into baking tray, cover with damp cloth or plastic wrap and again keep it in warm place for about 30 minutes for second rise.
  • After 30 minutes,bake the doughnuts at 375 F for about 15 to 18 minutes or until light golden color and done. 
  • Remove the doughnuts from baking tray and allow it to cool
  • For preparing the chocolate glaze mixture, put the chocolate chips,butter and corn syrup in the glass bowl and microwave it for 30 seconds  and whisk it to the smooth paste.Set the chocolate glaze aside
  • When doughnuts cools down,  put the cooling rack on the baking tray.
  • Take the doughnut and  dip  into the glazing mixture. Now place the doughnuts onto the cooling rack
  •  If you like decorate with colourful sprinkles and let the chocolate glaze dry
  • Then enjoy!!!.......

Eggless Almond Whole wheat cookies


INGREDIENTS
  • Whole wheat flour - 1  cup
  • Almond powder - 1/4 cup
  • Sugar  - 1/2 cup
  • Semolina - 1 tbsp
  • Chickpea flour (Besan) - 1 tsp
  • Baking powder - 1 tsp
  • Cardamom powder - 1/2 tsp
  • Nutmeg powder - 1/4 tsp
  • Salt - 1/4 tsp
  • Milk for kneading - 2 to 3 tbsp 
  • Softened butter - 1/2 cup
  • Raisins for toppings




PREPARATION
  • Add  all the above mentioned ingredients in large bowl. Mix well and then add softened butter to the flour mixture.
  • Knead well till you get soft dough. If required you can add little milk.
  • Preheat the oven to 350 F
  • Divide the dough into 20 small portions. Roll the each portion into smooth ball and slightly flatten it to give shape of cookies. On the cookies place your favourite nuts as the toppings. I used raisins.
  • Arrange these flatten cookies on the ungreased baking pan. Leave some space in between the cookies.
  • Bake the cookies for about 15 minutes.
  • When done allow to cool for 5 minutes and then transfer them on cooling rack.
  • Let them cool completely and then store cookies in airtight container.


Note
  • Do not over bake the cookies or do not allow the cookies to become crispy.They become very hard like a stone.So be careful.

Almond Cinnamon Rolls


INGREDIENTS
  • Whole wheat flour - 1 cup
  • All purpose flour - 1 cup
  • Sugar - 1/3 cup
  • Salt - 1 tsp
  • Dry yeast - 1&1/2 tsp
  • Butter - 3 tbsp
  • Vanilla essence - 1 tsp
  • Sugar - 1 tbsp
  • Milk - 1 cup 
INGREDIENTS FOR  CINNAMON SPREAD

  •  Cinnamon powder - 1 tbsp
  • Brown sugar -3 tsp 
  • Almond chopped - 1/2 cup

INGREDIENTS FOR GLAZE  MIXTURE
  • Softened butter - 3 tbsp
  • Icing sugar - 1 cup
  • Warm milk - 1 tbsp
  • Vanilla essence - 1 tsp



PREPARATION
  • Combine whole wheat flour, all purpose flour, sugar and salt in a large bowl and mix everything well.
  • Add dry yeast, sugar in warm water and  mix well.Let it stand for about 10 minutes.
  • When yeast mixture is ready add softened butter and vanilla essence into it.
  • Now add this yeast mixture to the combined flour and knead well till you get very stiffy dough.If required you can use little of warm water.

  • Place this soft dough into the greased bowl,cover it with damp cloth or plastic wrap for about 1 &1/2  hour. Keep it in the warm place( You can keep in the oven,just switch the oven to 200 deg F for about 3 to 4 minutes, then turn off the oven.).This will make dough ,double in its size.
  • After1 &1/2 hour,punch the dough and remove all the air from it. 
  • Roll out the dough into rectangle shape and spread cinnamon mixture on it.
  • Then roll the dough into log shape and cut into pieces .
  • Place these cut pieces into baking tray, cover with damp cloth or plastic wrap and again keep it in warm place for about 30 minutes for second rise.
  • For preparing the glaze mixture, mix softened butter, powdered sugar and little warm milk.. Make a smooth paste.
  • After 30 minutes, brush the rolls(cut pieces) with glaze mixture.
  • Bake at 375 F for about 15 to 18 minutes or until light golden color and done.
  • When done, glaze all the rolls using the remaining icing mixture. If icing mixture is too thick,add little water and make it thin and add little vanilla essence for more flavor.
