Earlier I had posted regular Indian pav bread and they were perfect in their texture. And the recipe of bread was followed until today in my kitchen. One fine day I had a thought to make a few change in my recipe that was using whole wheat flour instead of all purpose flour. So tried it thinking how they will turn out. To my surprise the bread were superb delicious in taste and they had soft texture. The only difference I found in both the pav bread. The whole wheat pav is heavier in weight as compared to regular pav. But never mind not everything but something we should comprise to have a healthier life. Right friends? So here is my healthy version of indian pav bread.
Garlic knots are the bread appetizer with enriched flavor of fresh garlic. Garlic knots are prepared with pizza dough where the dough are cut into strips, tied in a knot, baked and topped with garlic. I like knots in spicy version, so season these garlic knots with chilli flakes and hence named as chilli garlic knots. These knots are also season with parmesan cheese, oregano. If pizza dough is ready in your kitchen, you can enjoy these knots anytime as you like.
INGREDIENTS
For Pizza Dough
- All purpose flour – 3 &1/2 cups
- Sugar – 1tsp
- Olive oil – 2 tbsp
- Yeast – 1 envelope
- Salt – 2 tsp
- Warm water – 1&1/3 cups
- For Topping
- Garlic cloves – 5 nos
- Fresh Parsley or dried parsley – 2 tbsp
- Olive oil – ¼ cup
- Salt to taste
- Chilli flakes to taste
PREPARATION
- In this recipe I prepared garlic knots using leftover pizza dough. If you do not have the dough ready. Make the dough with above given ingredients.
- Preheat the oven to 400 deg F. Line the baking tray with parchment paper.
- Place the ball of pizza dough on the floured surface and flatten it slightly with your palm. Cut the dough into ½ inch strips.
- Make the knots from each strips and place them on lined baking tray.
- Bake the knots for 15 to 20 minutes or until you see knots turning to beautiful light golden in colour.
- Meanwhile prepare a garlic oil for topping.
- In a small processor or blender, combine garlic cloves, parsley and oil. Blend everything to smooth paste.
- Remove the baked knots from the oven and transfer the knots into large bowl. Pour the garlic oil, season it with salt and chilli flakes. Toss the knots until they are fully coated with garlic oil.
- Chilli garlic knots are ready to serve
Is there any one who do not like the freshly baked bread or its aroma.I love it. These are my favourite homemade soft puffy dinner rolls or Indian pav bread. These bread are really easy to make and flavour of its is awesome. I baked these bread in 8 inch round cake pans. You can also make loaf bread with the same dough.These pav were really soft and had a great texture.So I am sharing this recipe.
INGREDIENTS
Yields -16 pav bread into two 8 inch cake pan
- All purpose flour - 3&1/2 cups
- Potato flakes - 2 tbsp
- Non dry milk powder - 3 tbsp
- Instant yeast - 2 tsp
- Luke warm milk - 1/2 cup
- Luke warm water - 2/3 cup
- Salt -1&1/2 tsp
- Sugar - 2 tbsp
- Softened butter - 4 tbsp

PREPARATION
- Combine all the dry ingredients in a large bowl. Mix and knead - using your hands, a stand mixer to make a soft, smooth dough.
- Place the dough in a lightly greased container.Cover the container, and allow the dough to rise for 60 to 90 minutes, until it's just about doubled in size.
- Gently transfer the dough to a lightly greased work surface.
- Divide the dough into 16 equal pieces, by dividing in half, then in halves again etc.Round each pieces into a smooth ball.
- Lightly grease two 8 inch round cake pans.Space 8 pav bread in each pan. You can also use 9 inch round cake pans or a 9 inch * 13 inch pan.
- Cover the pans and allow the pav bread to rise till they are crowded against one anotehr and quite puffy about 60 to 90 minutes. Towards the end of the rising time, preheat the oven to 350 F.
- Uncover the pav bread and bake them for 22 to 24 minutes, until they are golden brown on top and edges of the center bun spring back lightly when you touch it.
- Remove the pav bread from the oven and brush with the melted butter.After a couple of minutes, turn them out of the pan onto a cooling rack.
- Serve warm.Store leftovers well wrapped at room temperature.
