Eggless Eggplant Parmesan

  • Eggplant sliced -1 medium
  • All purpose  flour -2 tbsp
  • Breadcrumb -1/4 cup
  • Italian Seasoning - 1/2tsp
  • Spagetti(wholeWheat) noodles -about 1bowl
  • Parmesan cheese powder
  • Mozarella cheese or cheddar cheese
  • salt to taste
  • Marinara Sauce
  • Tomato paste - 1/2 cup
  • Italian Seasoning -1/2 tsp

  • Boil the noodles and drain out  the water from it.
  • For marinara sauce, heat tomato paste by adding italian seasoning.
  • Slice the eggplant and keep it in water so that slices do not become black.
  • In the bowl, add all purpose flour,salt and italian seasoning and make a thin paste using little water.
  • Dip each slices in the paste and roll it with breadcrumb and shallow fry it.
  • In the oven proof tray, spread marinara sauce and add noodles on it.
  • On the noodles place egglant slices and again spread remaining marinara sauce.
  • Spread th cheese and parmesan cheese powder.
  • Bake this tray on 325 F for about 15 minutes or till  all the cheese melts.
  • Eggplant Parmesan is ready to serve.
  • Eggplant Parmesan can be served with garlic bread
