Strawberry Icecream - No Churn Icecream

As summer vacation has already started for my daughter, she is always in the craving mode of dessert specifically for Icecream. She is fond of strawberry icecream and always ask me for icecream. Making icecream at home are so easy just you need to mix all the ingredients, blend them,freeze it and your ready to gulp .

I was not really finding good strawberries at my grocery shop, there would be always few sweet strawberries along with lot many of sour ones. But luckily I found good strawberries and thought to make this dreamy, creamy delicious icecream.

No churn icecream are always easy icecream recipes. No longer steps only few steps and you are good to go . In this recipe, I have also used few drops of strawberry essence for extra flavor and few drops of colour for good appearance. You can omit it completely if you do not want to add artifical colour in your child's food but I think essence just enhances the taste of the icecream and should not be problem in adding it.

My daughter loved the icecream I made for her and enjoyed her favourite icecream saying it in her innocent way as  "Stobabby Ishcream"  (As she is just 2 , she is learning big words and calls strawberry icecream by this name).

Now coming to the recipe, here are the ingredients.

  • Chilled Fresh cream - 250 ml (I used Amul brand)
  • Condensed  milk - 1/2 cup
  • Fresh strawberries - 8 nos (Try to use sweet strawberries)
  • Pink food colour - 2 drops (For extra look, but one can omit it)
  • Strawberry essence- 1/4 tsp (For extra flavor)

  • Clean the strawberries and hulled them. Chop them and blend it in the mixer to smooth puree.
  • Chill the fresh cream pack before you use because this process separates thick cream from the water. And you can use only thick cream in making the icecream and omit the water.
  • In a bowl, add in the chilled thick cream and whisk it for 3 to 4 minutes using hand blender or whisker.
  • Then add condensed milk, food colour and essence in the cream. Whisk everything for another  4 to 5 minutes.
  • Then fold in strawberry puree using spatula.
  • Pour the icecream mixture into freezer box and freeze the mixture atleast for 8 to 10 hours.
  • Once done scoop out the yummiest icecream and serve it as it is or with any of your choice of sprinkles.
  • I was good to serve the strawberry icecream with one cherry in each serving.
  • Viola! Relish this Strawberry Icecream and you will surely forget your storebought icecream.
