Steamed Walnut and Banana Pudding With Mango Cremeux


Walnut Banana Pudding is a dessert which can be prepared in one step. I also like to call this dessert as one bowl dessert as it is very quick to make with less hassles. Just grind all the ingredients, pour it in the moulds and  leave it for steaming. Yes, you heard it right. I like steamed version of the pudding not the baked one. The pudding is prepared with walnuts, banana, almond flour, wheat flour, milk and oats. Walnut banana pudding is a perfect pudding that can be made for family gatherings or home parties.

I like to serve this pudding with mango cremeux or banana cremeux. Cremeux is the French word which means “cream”. Its texture is somewhere between sauce and mousse in terms of lightness. The cremeux are flavored custard based cream, thick but soft. Mango cremeux is the best match with walnut banana pudding.

 INGREDIENTS

To Make Pudding

  •  Ripe Banana – 4 nos, small (If bananas are big, use 2 nos)
  • Almond powder – 2 tbsp
  • Oat powder – 2 tbsp
  • Walnuts – ¼ cup (coarsely grinded)
  • Whole wheat flour – ¾ cup
  • Sugar – ½ cup
  • Honey – 1 tbsp
  • Baking powder – 1tsp
  • Baking soda – 1  tsp
  • Olive oil – 1 tbsp
  • Milk – ¾ cup

To Make Mango Cremeux

  • Mango puree – ½ cup (use mangoes of good variety)
  • Sugar – 3tbsp
  • Custard powder – 1&1/2 tbsp (if not available, it can be replaced with 1 tbsp cornflour and 2 tsp of milk powder)
  • Milk – 1 cup
  • Whipped cream – ½ cup (readymade whipped cream can also be used)

 To Decorate

  • Walnuts- few
  • Cherries – few
  • Crushed mix nuts - optional

METHOD

  • Into a blender, add whole wheat flour, oats flour, almond flour, coarsely grounded walnuts, baking powder, baking soda, honey, sugar and oil. Grind everything for few seconds.
  • You will see that mixture forming into dough. Then add milk and grind it again.
  • Now the mixture will turn to semi thick paste. This should be the right consistency of pudding mixture.
  • If you think the mixture is too thick, then you can add another ¼ cup of milk to the pudding mixture.
  • Transfer the pudding into glass bowl. Place the pudding filled glass bowl into the steamer and steam the pudding until it is done.
  • To check the pudding, simply insert the knife at the middle of the pudding. If the knife comes out clean, the pudding is done.
  • Combine mango puree and sugar into a saucepan.  Stir well and cook till the mango puree thickens.
  • Turn off the flame and keep it aside for later use.
  • Pour ¾ cup of milk into a saucepan and bring it to boil.
  • In another ¼ cup of milk, add in custard powder. Mix well such that there should be no lumps in the custard mixture.
  • Once the milk comes to boil, lower the flame and mix in custard powder.
  • Stir continuously till the custard milk thickens.
  • Turn off the flame and let the custard milk cool down.
  • Until the cooked mango puree and custard milk cools down. Beat the whipped cream to semi soft peaks.
  • Then mix in cooked mango puree and custard milk into the whipped cream.
  • Gently fold it together.
  • Here we go Mango cremeux is ready to serve on walnut banana pudding.
  • Walnut banana Pudding with Mango cremeux is ready.
