Cauliflower Tacos with Orange- Tomato Salsa and Baja Sauce


Mexican food somewhere  resembles to Indian food mostly because food is prepared with beans and spices. My whole family is a big fan of Mexican food. 

Today I tried this amazing dish called as 

Cauliflower Tacos with Orange- Tomato Salsa and Baja Sauce

This dish has four components – Tortillas,  Cauliflower filling, Orange-Tomato Salsa and  Baja Sauce

  • All purpose flour -1&1/2 cup
  • Baking powder – 1 tsp
  • Salt to Taste
  • Oil – 2 tbsp
  • Warm water – ¾ cup to 1 cup


  • Combine all purpose flour, baking powder and salt  into a bowl.
  • Mix in oil and rub into the flour mixture. As this step will make tortillas super soft. Do not skip it.
  • Add required amount of warm water to the flour mixture and make a soft dough.
  • Cover the dough with damp cloth and let it rest for atleast 30 minutes.
  • Divide the dough into small balls. 
  • Take a small dough ball and roll out the dough into semi thin tortilla.
  • Dust some flour while rolling out the tortilla.
  • Heat a skillet on medium flame and place the tortilla on it. Fry it till you see golden brown spots on both the sides.
  • Wrap the fried tortillas in the clean kitchen towel until they are used. This makes the tortillas to remain soft for longer time.
  • Tortillas are ready .

2.Cauliflower filling


  • Cauliflower  (chopped) – about 2 cups
  • Onion (chopped) – 1 medium
  • Ginger (chopped) – ½ inch piece
  • Green chilly (chopped) – 1 no
  • Pickled Jalapeno pepper – 2 nos (one can also use fresh ones if available)
  • Hot sauce – 2 tbsp
  • Turmeric powder – ¼ tsp
  • Coriander powder – 1 tsp
  • Cumin powder – 1 tsp
  • Garlic powder – ½ tsp
  • Salt to taste
  • Oil – 2 tsp
  • Cilantro(chopped)- to garnish


  • Heat pan on medium flame and add oil into it.
  • Add chopped ginger and chopped green chilly.  Fry for 20 seconds.
  • Then add chopped onion and fry till are slightly light brown in colour.
  • Add  turmeric powder, coriander powder cumin powder and salt. Saute for few seconds.
  • Add chopped cauliflower and mix everything well. Cover the pan with the lid and let the cauliflower  cook until they are soft.
  • Now here comes the best part. Add hot sauce in the cauliflower mixture. Mix well and saute for another 2 minutes.
  • Cauliflower Filling  is ready.

3.Orange - Tomato Salsa


  • Orange (chopped)–3 segments
  • Tomato (chopped) – 1 medium
  • Onion (chopped) – 1 small
  • Cucumber (chopped) – 3 tbsp
  • Cilantro (chopped) – 2 tbsp
  • Pepper – two pinch
  • Salt to taste
  • Lemon juice – 1 tsp


  • Combine all ingredients into a bowl.
  • Add pepper powder, salt and lemon juice. Mix everything well.
  • Orange- Tomato Salsa is ready.

4. Baja Sauce


  • Mayonnaise – 1/4 cup
  • Thick Yogurt – 2 tbsp
  • Hot Sauce – 2 Tsp
  • Pickled Jalapeno pepper (cooked) – 1 Tbsp
  • Cilantro (chopped) – 1 Tbsp
  • Salt to taste
  • Pepper – a pinch
  • Honey – 1 tsp

Combine mayo, yogurt, chopped jalapenos, chopped cilantro, pepper powder, salt and honey into a bowl.
Whisk everything well .
Then add Hot Sauce into the whisked mixture. Give a quick stir.
Baja Sauce is ready.

To Assemble Taquitos

  • Place tortillas on the plate.
  •  Scoop out 2tbsp of cauliflower filling onto each tortilla.
  • Add Orange tomato Salsa and Baja Sauce.
  • Wrap the tortillas.
  • Here we go delicious cauliflower tacos are ready.
  • You can make these rolls ahead of time and just roast them on the skillet until warm before serving.
  • Serve these tacos warm. It tastes  too good.
